These quick and easy roll-ups are packed with protein and can be used as an alternative to many grain products – from pancakes to wraps.
GRAIN-FREE BREKKIE ROLL-UP
What you’ll need
2 eggs
Butter, for frying
Your choice of fillings (eg: bacon, smoked salmon, avocado, cream cheese, tuna, mayo, tomato)
The how-to
Beat the eggs together.
In a heavy-bottomed frying pan, heat the butter to a gentle sizzle, then pour in the egg to cover the bottom of the pan.
When you see that the underside is almost cooked, gently flip over and cook on the reverse side.
Remove from pan, layer with your choice of fillings and roll it up!
