GRAIN-FREE BREKKIE ROLL-UP
What you’ll need
- 2 eggs
- Butter, for frying
- Your choice of fillings (eg: bacon, smoked salmon, avocado, cream cheese, tuna, mayo, tomato)
- Beat the eggs together.
- In a heavy-bottomed frying pan, heat the butter to a gentle sizzle, then pour in the egg to cover the bottom of the pan.
- When you see that the underside is almost cooked, gently flip over and cook on the reverse side.
- Remove from pan, layer with your choice of fillings and roll it up!
