The easiest lamb dish ever!

How good do perfectly marinated, lamb vindaloo riblets sound? Trust us, they taste even better! This delicious meal can be prepped the night before a dinner party, and then easily whipped up on the day. Plus the recipe is full of yoghurt – the ultimate source of vitamins and essential nutrients. Nail your next dinner party thanks to this great recipe from  Danone!

LAMB VINDALOO RIBLETS

(Serves 4)

Ingredients

- Lamb ribs

- 3 Green chili peppers, finely chopped

- Mint, finely chopped

- 250ml Danone Nutriday plain yoghurt

For the marinade

- 250ml Danone Nutriday plain yoghurt

- 2 tbsp Cumin seeds

- 2 tbsp Coriander seeds

- 5 Garlic cloves

- 5cm Ginger root, peeled and smashed into a paste

- 1 tsp Fenugreek seeds

- 4 Dried red chili peppers

- 1 tbsp Black peppercorns

- 3 tbsp Soft brown sugar

Method

- Mix together all the ingredients for the marinade.

- Massage the marinade into the lamb riblets and let them soak overnight.

- Pre-heat the oven to 125 degrees.

- Place the ribs on a rack in the oven and allow to cook for at least 2 hours.

- Serve with a drizzle of plain yoghurt, and sprinkle on green chili peppers and mint.
