The perfect poolside chicken skewers

If you like a little bit of a bite, then you’re going to love these chicken skewers! Thanks to the yoghurt in the peri-peri sauce, these smart snacks contain plenty of vitamins and essential nutrients. Plus, they’re super tasty. Make extra sauce because you’re going to want to dip! Thanks to Danone, tonight’s supper is sorted.

CHICKEN SKEWERS WITH A PERI-PERI YOGHURT SAUCE

(Serves 4)

Ingredients

- 250ml Danone vanilla yoghurt

- 1/4 cup Lemon juice from 2 lemons

- 3 tbsp Extra-virgin olive oil

- 1 tbsp Fresh ginger, peeled and finely grated

- 1 tbsp Salt

- 2 tsp Hot paprika

- 2 tsp Freshly minced garlic (about 2 medium cloves)

- 1 tsp Freshly ground black pepper

- 1/2 tsp Ground cumin

- 1/2 tsp Cayenne pepper

- 2kg Skinless, boneless chicken thighs (cut into cubes)

Method

- Whisk together the yoghurt, lemon juice, oil, ginger, salt, paprika, garlic, black pepper, cumin and cayenne pepper in a medium bowl.

- Place the chicken cubes in a large resealable plastic bag. Pour in the marinade and seal the bag, removing as much air as possible.

- Place in the refrigerator and marinate for 4-8 hours.

- Once the chicken has been sufficiently marinated, thread it tightly onto skewers.

- Grill skewers until well browned on all sides and the center of the chicken is cooked.

- Serve immediately with extra marinade on the side.
